Back from the lake.

     Just got back in from the lake. I carried the wife up Wednesday morning and come back Friday for the BBQ. As I was gone Friday and Saturday night my wife had her sister ,daughter and a girl friend up while I was gone. I missed 4 man hating drunk women those nights . I went back up Sunday morning early with sausage biscuits for everyone and to appear sociable .Now I like all of them but I avoid middle age bitter women in groups with booze .

    When it was just me and the wife we enjoyed our alone time as it was cloudy and turned very cool. The leaves seemed to change and start falling in one night. We think winter will be a late but cold one. The deer looked fat and was at the camp site begging every day. I have to winterize the camper this week because I think this was its last trip till early spring. We plan on taking the squatty on a winter trip to Florida sometime in January .

 A point of interest  we Almost run out of propane this trip .  We have camped 2 years almost and around 80 days total with 30LB. of propane for hot water and cooking and a few days heat. This surprised me the last 2 trips I carried a spare tank . We used it as needed if we had to make it last it could have gone 10 more days easy.

We are having fun !

          The trip down went well ! I made 1 mistake I kept my foot in the pedal going 75 pulling the fun finder and my mileage was about 9 miles to the gallon. That's a problem when its been awhile between trips you hurry and forget to enjoy the ride. The ride is as important as the destination going home I will be going slower and taking the old roads .

      Before the interstate system the rural HI ways held a lot of places for travelers to stop and places to see .Now they are almost gone I remember old Burma Shave billboards and See Rock City painted on old barns and Stuckys advertising 2 eggs bacon and toast for 99 cents.
 I will be back on here later this week. Love the Wi-Fi at mc D but this coffee suck . I am taking the wife a sausage bisects back to the camp site and fix some drinkable coffee !!!

A cheap prepp that has great shelf life.

     OK we all know about beans and rice,whole wheat,sugar.All these are great long term storage items.Alone they aren't very appetising so you need other items to benefit from them.One item every prepper should have in my opinion is Krusteaz pancake mix.I get a 10lb bag at Sam's for 6.98 It makes 200 or so pancakes that can be eaten plain or with butter and syrup.
    I have eaten a bag that was 4 years out of date and could not tell it from new.No it wasn't froze it was in a 5 gallon bucket in the basement.Now it had not been opened was just stored in what i call a grab and go bucket.Usually they are stamped with a use by date 18 months to 2 years out.I have no fear of this product 3 to 5 years or more past the use by date.A 10 lb bag has 16,000 calories add in a little sugar syrup(1 quart hot water 4 lb sugar tbs vanilla).For under 10$ you get over 24,000 calories.

Buckboard Bacon

     Today i started making Buckboard bacon.I have been wanting to make some for over a year now.I have read about it on other blogs and wanted to have a go at it.Normally i BBQ 8 to 16 Boston Butts a weekend so i always have them on hand.This weekend i cooked 14(not bad for January on the side of the road)and had 2 left over .I debone 1 and cut it in to2  4 lb pieces.The cure i used was from this blog http://simplyselfsufficiency.blogspot.com/2012/02/buckboard-bacon.html   the only changes i made was i used 8 oz salt and 8 ounces brown sugar and no nitrate salt.I used 2 oz of rub from the BBQ in the mix (my preference).
   In 10 to 12 days i will be cold smoking this overnight and then finish smoking it to 140 to 150 internal temp.I hope it turns out close to this  pictures marbling.
     The name Buckboard seems to have come from cured and smoked pork carried on wagon trains out west. It was packed in a box or barrel of buckwheat.To head west a family was required to have 50 lbs of salted cured pork packed in Buckwheat.Remember this was late May through  September.

a few pics that i meant to post yeterday.

this is a picture of the brisket hash i want to do but i want a few more peppers and onions in it.

I may add tacos and wraps to the lunch but it will be filled with smoked beef pork or chicken to keep cost down.I love BBQ but a lot of people may want a different twist.


  I  am looking at re fried beans and rice one i like them 2 its survival food Mexican style. Like i said yesterday i only have a 70 sq ft kitchen so i will be limited in what i can have prepared.
